Owner and chef Hugo Garcia opened Con Huevos Tacos because he wanted to highlight the cuisine of his mother and grandmother, who grew up in the Rio Grande Valley and the town of Valle Hermoso in northern Mexico.
In November, Garcia and two other San Antonio spots (Naco Mexican Eatery and El Pastor Es Mi Señor) will spotlight their legacy in a documentary series on Netflix.
American chefs can also be seen experimenting with new flavors in Taco Chronicles, which releases its third season on November 23 on the streaming platform.

The husband and wife team behind Naco Mexican Eatery, Francisco Estrada and Lizzeth Martinez, jumped onto San Antonio’s culinary scene in 2018 with a food truck at a former gas station at the intersection of Loop 410 and Nacogdoches Road. rice field. Martinez grew up in Nuevo Laredo and Estrada grew up in Mexico City. The couple has fused north and south Mexican culinary traditions into a menu of chilaquiles, tacos, and tortas that have received rave reviews from his monthly and other outlets in Texas.
Con Huevos Tacos, which launched egg-based tacos and quesadillas in November 2019, also received praise from Texas Monthly.
El Pastor Es Mi Señor opened its locations in Stone Oak and Huebner in 2020 before moving to Wurzbach Road.
The “Octopus Chronicle” series debuted in 2019. The show’s creator, Pablo Cruz, focuses on the origins and styles of Mexican cuisine. The show’s second season followed longtime Tex-Mex eatery Teca Molina and Ray’s Drive-In.
