Blueberry Pecan Salad (aka Main Iac Salad)
Inspired by Freshies, this recipe is a deliciously refreshing homemade Maine-Iac salad. Take a few extra minutes to make your maple pecans and dressing. You can also add grilled chicken for a complete meal.

Blueberry Pecan Salad with Maple Balsamic
This Blueberry Pecan Salad is made with fresh blueberries, sharp cheese, candied pecans, and a homemade maple-balsamic dressing.
serving 6 serving
maple pecan
- 1½ cup half a pecan
- ⅓ cup Maple syrup
- a pinch of salt
- A pinch of cayenne (optional)
maple balsamic dressing
- ⅓ cup extra virgin olive oil
- 2 tablespoon Maple syrup
- 1 tablespoon balsamic vinegar
- 1 tea spoon whole grain mustard or Dijon mustard
- Season with cracked pepper and salt

- Five Oz. mixed greens
- 1 cup fresh blueberries
- 1.5-2 Oz. Seahive cheese, crushed (see note)

In a large nonstick skillet, heat the pecan halves, syrup, salt, and cayenne over medium-low heat, stirring ingredients frequently. Cook the pecans and syrup for about 7 to 12 minutes. Be careful not to burn yourself. Little strands of sugar should form as you toss the pecans over the pan. If you haven’t seen this yet, be patient and keep cooking. Removing pecans from heat prematurely will eventually result in a soft, sticky consistency.

When strands of sugar begin to form, remove from heat and pour maple-coated pecans onto parchment paper.

Combine the olive oil, maple syrup, balsamic vinegar, and mustard in a jar or small bowl and whisk with a fork or whisk until smooth. Add a few cranks of salt and fresh cracked pepper and whisk again. Taste and add salt or pepper if desired.
Assembling the salad

In a large bowl combine mixed greens, chopped maple pecans, fresh blueberries and crushed cheese. Serve the dressing on the side or toss the dressing into the salad just before serving.
*Freshies uses a wonderful cheese called Seahive cheese in their Maine-Iac salad. Made with Utah Beehive Cheese. If available, I highly recommend using it in this salad. Another great substitute is another hard cheese similar to a cross between cheddar and parm. increase. To break up the salad with a fork, hold the cheese firmly in one hand and scrape the fork with the other.
