SAN ANTONIO — A young entrepreneur had a vision of starting what he called a “sushi and Mexican fusion” business. And he was eager to feature his work in his Neighborhood Eats: Food Truck Edition.
He said he’d never found anything like this in San Antonio, so he decided to open a food truck and name it Suchi-N-Gon. You can follow him on social media to see where he works, but he usually parks inside his Camp 1604 at 5535 N Loop 1604 W Access Road.
“There’s a truck that sells sushi that’s inspired by the fusion of Mexican food and sushi. It uses Mexican ingredients like pastor, coriander, serrano peppers and cheese,” said owner Francisco Garcia.
